The grape is harvested when completely ripe, in excellent meteorological conditions, as the land owner has their own harvesting machine. During the pressing, the juices are classed by their different qualities in vats. After decanting, fermentation follows, undergoing temperature control. Once fermentation is over, the wines are filtered and collected. They are then analysed by oenologists in an oenology laboratory in Gascony. It is in the quest to adapt the finest territories that these wines are obtained, wines which distinguish themselves with their characteristic aromas.
